La chaleur emmagasinée pendant la journée sera restituée la nuit. L’eau va s’évaporer au contact des galets ainsi les maladies seront limités et une maturité lente va s’opérer. Le rendement Faible de 30 hectolitres/hectare pour préserver la qualité de notre cru.
